How Do You Sharpen Your Knives?

Dull knives have no place in anyone’s kitchen, but especially not your restaurant’s kitchen. An improperly sharpened or dull knife can compromise both the speed of preparation and the aesthetic quality of the food served. That makes a knife sharpener an essential kitchen tool, and there are many options to choose from.

This article from The Back Burner describes the difference between honing and sharpening, and offers a variety of sharpeners to choose from including honing rods, sharpening stones, manual knife sharpeners, and electric knife sharpeners.

Honing rods are sometimes called sharpening steels, but they’re made for perfecting and straightening an already sharp blade. Sharpening stones, or whetstones, work well for sharpening dull knives and other blades such as scissors. Manual sharpeners are great for chefs on the go, while electric sharpeners offer less control and are best left on a counter.
