Hop on the protein-rich cricket flour trend!

Most people who find bugs in their restaurant meal freak out and receive a refund and apology, but tables are turning as sustainably produced, protein-rich flour made from crickets is creeping onto menus across America, and there is a lot of potential rewards for restaurants willing to jump on the trend.

With more Americans seeking sustainable, healthy food, insects are an excellent choice if people can get past the “ick” factor. The crickets are ground into flour which can be used in a wide variety of foods.
