How Your Restaurant Can Beat Bird Flu

Recently a strain of avian influenza decimated a large portion of the United States’ chicken supply, most notably egg laying hens. Egg supplies are expected to be limited and expensive for the next year or more, especially liquid egg products. However, there are some things your restaurant can do to manage this challenge.

For example, Los Angeles-based fast casual pizza concept PizzaRev established a partnership with Buffalo Wild Wings, allowing them to receive a reduction in chicken costs through a new relationship with Tyson.

If partnership isn’t something you’re interested in, you can adjust your menu prices for egg and chicken dishes, remove or de-emphasize dishes that are egg heavy, and offer a variety of breakfast substitution ideas at breakfast bars. If you use a lot of liquid eggs, switch to shelled eggs if possible.
