Using Cross Selling and Upselling to your advantage

If you want to make more money at your bar or restaurant, cross selling and upselling are effective strategies. Cross selling is when you suggest another item that pairs well with the item your customer is interested in, such as a side dish or particular beverage. Upselling is offering a higher quality version of your customer’s order, like a more expensive top shelf cabernet. Read on for some tips to help you make the most of these tactics.

Start by training your servers in these practices and emphasizing how important they are. They should speak in specifics rather than generalities while being enthusiastic about the options they’re selling. Just make sure they don’t go overboard and get pushy if the customer isn’t interested.

If a customer is unsure, they’re more likely to be susceptible to this selling strategy. If they ask for suggestions it’s the server’s time to shine! Have them focus on upselling more expensive menu items or offering great pairings.

Remember that upselling and cross selling are just strategies, not the end all be all. Helpfulness and a positive attitude is what keeps customers coming back!
