Over 70 percent of consumers report that their restaurant choices are influenced by the availability of healthier choices. Additionally, millenials and Gen Xers, who are steadily making a larger portion of disposable income, prefer healthier options at a much higher rate than older generations. Restaurant owners have capitalized on this trend by introducing more healthy options and marketing their businesses as healthy establishments. They recognize that their healthy dishes will only continue to grow in value.
